Cooking has been Chef Hawks’ livelihood since the ripe age of 16, when he began cooking at a family restaurant and catering company. Although originally determined to become a Computer Engineer, Hawks decided to make a career out of food and moved to Pittsburgh, where he received a Culinary Arts degree from Pennsylvania Culinary Institute – a Le Cordon Bleu school. He has since worked every back-of-house position, from chef at a boarding school to Kitchen Manager at large chain restaurants to a private chef.
“Hollywood” Hawks, as he’s affectionately known to us for his endless charisma and talents, started at The Rail as Executive Chef of Akron in January of 2013. He went on to open the North Olmsted and Canton Rail locations and in July of 2015, he became the Executive Chef for Mike Mariola Restaurants, overseeing all recipe development, menu changes and back-of-house training while setting and maintaining quality food expectations.
